Roasting excellence rewarded

Anthony Papas is devoted to quality and flavor. Those attributes have led the business partner of coffee roaster Allpress to culinary glory, founding Sydney’s iconic Bayswater Brasserie, working as its executive chef as well as establishing a bakery of the same name that produces sourdough bread sought after across town.

Papas opened the Brasserie more than 25 years ago, long before Sydney had made itself a name on the global restaurant landscape. Cook books and a second restaurant in Sydney followed.

As Papas knows, quality and flavor don’t simply appear, they need to be understood, checked and improved. And he did just that working and learning in Michelin-starred kitchens in the Netherlands and the US.

First official energy test

Because climate change and energy costs are of concern to all of us, Dalla Corte has commissioned IMQ, The internationally renowned institute for product certification in the areas of quality and safety to conduct energy efficiency tests, which have already proven successful for many other electrical appliances, to develop a neutral test process.

"This test procedure ensures that from now on there is more transparency and comparability in the market," according to Dalla Corte. "Two-, three- and four-grouped machines from the Evolution Series were tested under different conditions, such as 24-hour operation, standby and so on. The results now firmly establish Dalla Corte as setting the industry standard for espresso machines."

Dalla Corte claims that it now provides the first true comparison for energy efficiency in the industry and challenges its competitors to come up with increasingly better more energy efficient products.

   

Air pot stations

US

Tomlinson Industries’ Modular Dispensing Systems now offers two new air pot stations, vacuum formed heavy-duty organizers for coffee and/or tea service. Designed to accommodate air pots of virtually any size, these air pot stations are available in two sizes with each featuring a divided organizer that can hold lids, creamers, sugar, stir sticks and more; a stainless steel drip tray to keep the area clean, dry and clutter free; and an air pot riser. The small, single station is 16-1/2" wide x 12-1/2" deep and provides space for one air pot, divided condiment organizer, one stainless steel drip tray and one air pot riser.

The large, double air pot station is 25-1/4" wide x 12-1/2" deep and provides space for two air pots, divided condiment organizer, two stainless steel drip trays and two air pot risers.

Crem International at World EXPO

China

On May 1, the World EXPO in Shanghai opened its doors to the public and Crem International was deeply involved in the execution of this event as one of the official sponsors and the exclusive supplier of coffee and tea machinery to the Swedish pavilion.

The World EXPO 2010 in Shanghai, which will run until October 31, 2010, is expected to be the biggest EXPO ever. A total of 228 countries and international organizations have so far announced their participation. The organizers estimate that 70 million people will visit EXPO 2010 during its six month duration, with 95% of the visitors being Chinese.

Special Edition for WBC

UK

On the occasion of the World Barista Championship (WBC), which will take place from June 23 to 25 in London, Mahlkönig is presenting a limited WBC Special Edition of their grind-on-demand espresso grinder K30 Vario.

The special WBC 2010 design grinder – in either striking red or trendy blue – is produced in very small quantities. Each of the grinders will be delivered along with a particular Special Edition certificate.

In addition a WBC Special Edition grinder can be won in a raffle that will take place on-site during the event in London.
