The coffee grinder is necessary for the correct grinding of roasted coffee beans, thus providing the ideal grinding point for the espresso preparation. Turning coffee into small particles increases the effectiveness of the extraction, since the estimated overall surface of the coffee grinds exposed to water covers some square meters for each dose in the filter holder.

“We decided to design and manufacture our own on-demand coffee grinder because we noticed the scarce knowledge about this sector in the international market,” states Paolo Dalla Corte, co-owner of Dalla Corte Company along with his sister Elsa. “This device is generally seen by most professionals simply as an instrument that ‘grinds’ coffee beans, rather than an essential part of a system for the preparation of the espresso. A long study on grinding and a long experience in flat burr blades design have been necessary to obtain the perfect ‘cut’ and therefore the optimum grinding point for the espresso.” As a matter of fact, correct grinding and a suitable distribution of particles obtained from the cut of roasted beans lie at the base of a correct espresso extraction. On the contrary, a badly ground coffee is the first step towards a bad extraction.
Dalla Corte’s dc one by is an on-demand flat burr coffee grinder. Its brushed aluminum body is sturdy and easy to clean. Its polycarbonate bell hopper has a capacity of 1.5kg. It can be operated easily: just place the single or double filter holder on the support and exert a light pressure to obtain the right dose of freshly ground coffee. The coffee grinder will automatically recognize a single or double dose.
The dc one is equipped with a display showing its operating status and useful information such as the set grinding point and time, as well as the number of brewed coffees, the temperature of the engine and the ground coffee; it also signals any possible breakdown and need of burr change. Grinding can be adjusted down to one hundredth of a millimeter simply by pushing the buttons on the front panel, thanks to a granulometry adjustment with a variation in the spacing between burrs of 0.01mm for each graduation. The engine temperature is always under control: if it exceeds a pre-established range, the cooling fan turns on, preserving the roasted coffee from overheating, which would negatively affect the quality of the espresso.
The dc one is connected electronically to the espresso machine through a serial cable, thus creating a complete system for the preparation of the espresso, from bean to cup. The constant dialogue between the two devices controls the extraction and, if necessary, automatically adjusts dose and grinding, thus ensuring a perfect espresso, extraction after extraction, with no need for barista’s intervention.
